  4. Strain or Gently remove the fat content from water using the spoon (that's our cheese! 😄) and gently press it between your palms to squeeze out water and to shape it. Put the cheese in another pot of water at room temperature to wash out the sour water from it as well s to cool it down a bit.
  5. Dip it in the water, squeeze and repeat for about 3-4 times.
  6. Next add the ball of cheese in the hot water for half a minute or so. Constantly stir it with a frying spoon and lift it up after a few seconds. (Tip 2: Do not let the cheese sit at one place in the pot or on the spoon because it starts melting.) Take it in your palms, squeeze out water and dip it in hot water again. Repeat this entire step for 2-3 times.
  7. Put the cheese ball in an airtight container of your desired shape. Press it to fit in in the container and cover it. You may also keep it in the show of a ball and simply wrap it with a cling plastic. Refrigerate it at least for an hour before you start using.
  8. Store-bought VS home-made mozzarella : 1. Taste: home-made mozzarella has milky taste whereas store-bought mozzarella is almost tasteless. 2. Texture and colour : both look the same. 3. However, it is not bad at all if you are hygiene conscious and insist on using home-made ingredients as and when possible.
