- 1 pinch salt

- 1/4 teaspoon chilli flakes
- 1/4 teaspoon mixed Italian herbs

- Grease deep pizza pan (6-7 inch diameter)with little oil.Set aside.
- Take leftover rice, egg whites and mozzarella to a mixing bowl.
- Mix well with a fork. Also add in crushed black pepper, mix herbs, chilli flakes and salt. Mix well to make a slimy mixture.
- Pour the mixture on the prepared pizza pan. Spread nicely and uniformly to cover the pan and also spread to the rim of the pan.
- I also used one small tart shell to finish my pizza mixture.
- Preheat oven at 180 degree C for 10 minutes.
- Bake the rice pizza for about 20-25 minutes or until it becomes light golden brown.
- In the meantime, cut bell peppers and tomato in cubes. Deseed the tomato pieces.
- I have little purple cabbage in my fridge, so used it. If you have any other veggies like mushroom, zucchini, cooked beans, paneer etc, you can use as topping.
- When the pizza base is ready remove from oven.
- Spread some tomato ketchup to the base of the pizza.
- Fill with some of the prepared vegetables.
- Beat 2 leftover egg yolks with little salt, pepper and herbs.
- Pour over the veggies.
- Now place the remaining veggies over the pizza.Also sprinkle some mozzarella as per your liking.
- Sprinkle some chilli flakes, mix herbs and olive oil.
- Again bake(preheated oven) the pizza at 200 degree C for 12-13 minutes.
- Delicious thin crust rice pizza is ready now.
- Serve hot as snack or as you can serve to your kids as lunch. They will definitely enjoy it.
